 Meredith Nicolls is a well-known presence in Hampton Roads. Besides serving up some of the finest dishes in the region at his popular restaurant, Cafe Rosso, in Norfolk's Ghent, Meredith has that charisma that draws people to him wherever he goes. Portfolio Magazine recently called him "a passionate chef-owner and generous teacher" with an indomitable spirit and a devilish sense of humor." That's Meredith sure enough. Always one to greet his restaurant's guests at the door with a big smile, he displays that genuine joie de vie in all aspects of his life. A native of Virginia's Eastern Shore, he apprenticed his trade in Washington, DC, at Dominique's, then came to Hampton Roads, where he established a reputation of his own at The Iron Gate House, Meredith's at Willis Wayside, and the Kitchen at Powhatan Plantation before founding the ever-popular Cafe Rosso. Meredith and Kathy, his wife of 16 years (pictured above), have always been huge supporters of the arts and other worthy organizations in Hampton Roads, including CHKD, the United Way, WHRO, Tidewater Access, and the Virginia Symphony. The walls of Cafe Rosso are covered with the work of local artists.  At 56, Meredith had recently begun exploring his new passion, mountain biking. And it was at Tidewater Mountainbike Challenge in James City County on October 31 that Meredith was thrown from his bicycle, injuring his spinal column and changing his and Kathy's lives forever. Since then, hundreds of people have come to Meredith's aid with words of encouragement, letters, emails, and fundraising events that will help the Nicolls meet the expense of Meredith's long recovery. And it's no wonder. Friend and fellow biker, Henry Peddle, said it best: "He is a kind man who seems to possess the uncanny ability to spark a little extra joy in everyone's life he comes in contact with. Although he's a chef by trade, I personally know him as being one of the greatest livers of life of all time. " |
